    Early Harvest Richness in Every Bottle

    Through our commitment to green harvesting—using only early-picked green olives—we achieve very low oil yields, averaging just 15%. This approach means the oil is exceptionally low in acidity and rich in healthful polyphenols, offering superior quality to our customers. While letting olives ripen to black would increase the oil yield to as much as 25%, it can also raise acidity and lower polyphenol content. We choose quality over quantity, ensuring every bottle delivers the purity and vibrant health benefits that define Almeria Gold.

    Naturally Extra Virgin: Our acidity rarely reaches 0.2%, well below the 0.8% standard for Extra Virgin classification.

    Certified Analysis: All chemical analysis is conducted by an International Olive Oil Council (IOC) certified laboratory.

    Long Shelf Life: Low peroxide values ensure freshness for up to two years.

    Our process is a labor of love that prioritizes quality over quantity. The journey of our pristine organic oil begins with hand-harvesting green olives. Regardless of the yield size, every harvest is transported immediately to a neighboring organic cold press mill. We oversee every step:

    Temperature Control: Processing never exceeds 27°C (80°F) to preserve delicate nutrients.

    State-of-the-Art Milling: Olives are de-leafed, malaxed, and centrifuged in an FDA-registered, EU-certified organic mill.

    Speed: The entire transformation from fruit to oil takes just two to four hours.

    This rapid process ensures there is no oil standing in tanks and no metering of taste—just the pure, vibrant "green gold" flowing directly from our tanks to your bottle. Currently available in our signature 500 ml (16.9 Fl Oz) bottle.

    “This is a fantastic medium-intensity Picual oil with a perfect balance of strong fruitiness and pungency with medium bitterness. It has a wonderful floral aroma. The fruitiness is mostly green-herbal with some light undertones of ripe olive fruit. The green flavor characteristics that dominate are spicy herbs, mint, nettle, olive leaves, and chili pepper.”

    “This is one of the best robust olive oils in the world with an extremely complex flavor profile that captures the wonderful ripe fruit flavors of Arbequina and the spicy green herbaceousness of Hojiblanca.
